Description: A classic cookie reimagined with cranberry flavor, using cranberry protein powder and Cran d’or chocolate.
Yield: Makes 10 cookies
1/3 cup unsalted butter
1/3 cup light brown sugar
3 Tablespoons white sugar
2 teaspoons vanilla extract
1 large egg yolk
1 1/2 Tablespoons cranberry protein powder
3/4 cup minus 1 Tablespoon all purpose flour
1/2 teaspoon baking soda
1/3 cup Cran d’or chocolate chunks (melt 5 oz chocolate w/ 1 teaspoon Cran d’or cranberry oil)
1/4 cup dried cranberries
To make Cran d’or chocolate: melt chocolate in the microwave or using a double boiler method on the stove top. Once all chocolate is melted, add Cran d’or cranberry oil to chocolate and stir to combine. Pour chocolate onto parchment paper and allow to solidify. Once solid, break into chunks. To make cookies: Microwave butter to soften. Add butter to a standing mixer with a paddle attachment with brown and white sugar and vanilla extract. Beat together until smooth. Add egg yolk and beat again until combined. Add cranberry protein powder, flour and baking soda to the mixer. Dough will start to pull away from sides. Once dough is fully combined add chocolate and dried cranberries. Refrigerate dough, covered in saran wrap for 30 minutes to 1 hour. Preheat oven to 325 F with a rack in the center of the oven. Line a baking sheet with parchment paper. Remove cookies from fridge and form approximately 1.3 oz cookies into a tall, almost rectangular shape. Place upright on baking sheet and bake for 12 minutes. Remove from oven and rest on cookie sheet for an additional 2-3 minutes.
