Yield: Makes 1 pound chocolate covered strawberries
5 ounces high quality dark chocolate melting wafters
1 teaspoon Cran d’or cranberry oil
1 pound fresh strawberries (small-medium)
*optional: cranberry juice powder
Wash strawberries and pat dry with a paper towel. When strawberries are completely dry, heat melting wafers in the microwave or using a double boiler method on the stove top. Stir chocolate occasionally as heating. When chocolate contains no lumps, add Cran d’or cranberry oil to chocolate and stir to combine. Pick up each strawberry by the green top, dip into chocolate to coat all sides leaving the top of the strawberry exposed. Wait for extra chocolate to fall back into the melted chocolate bowl, then place strawberries on a parchment covered baking sheet. While chocolate is still melted in the bowl but chocolate on the strawberries has hardened, pipe or drizzle an extra layer of chocolate on the strawberries to create a design. If desired. dust cranberry juice powder over piped line while still wet to achieve pink color with extra flavor. Store in refrigerator.
